FIRST VINTAGE: 2007.
GRAPE BLEND: Syrah.
HARVEST: manual, August and September.
VINIFICATION: Grape selection followed by destemming and soft pressing. Fermentation
in steel tanks at a controlled temperature followed fy traditional punching down and pump-over.
AGEING: in steel tanks for 14 months. In bottle for 3 months. TOTAL ACIDITY: 5.5 g/L.
ALCOHOL: 14%.
TASTING NOTES:
COLOUR: Ruby red with purple highlights.
AROMA: Intense and fine, characteristic of the grape, with hints of red fruits and wild berries, slight hints of balsamic and of white pepper.
FLAVOUR AND TEXTURE: Dry, quite sapid and lingering, medium bodied supported by velvety tannins.
FOOD PAIRINGS: Traditional with red meats and medium- seasoned cheeses.
IDEAL SERVING TEMPERATURE: 16°.
