There is no Puglia without aubergine! It’s a typical preserve of our homes, kept in jars filled with olive oil, always ready to accompany a slice of good apulian bread.
It’s dinner, aperitif or ideal side dishes: we flavour it with a little garlic and vinegar, with the respect of the tradition. Excellent as a side dish or appetizer. They really taste good along with any second course of meat, fish, fresh and seasoned cheese.
