South-facing vines, aged from 13th to 88th years old, cultivated with pergola method and in rows, with single and double capuccina system.
Manual grape harvest in boxes, immediate destemming, 18 hours maceration on skins, soft pressing, clarification and cold decantation, separation of the grape must, addition of selected yeasts and controlled temperature fermentation. Vinified and stored in stainless steel barrels.
