Great as an appetizer or aperitif, these olives are particularly good to flavor pasta salads, sea bass and sea bream baked in foil. Marinated for over five months in brine, they ripen to become slightly wrinkled with a really interesting bitter taste…, it’s appropriate to say “Ugly but good…”?
